I love bread, and I had to find the easiest way to replace classic white bread with a low carb version. This recipe is actually easier than my White Keto Bread, and it turns out perfect every time. If you’re a lover of super fast recipes, you might like my 90 seconds bread, too.

An incredibly delicious low carb bun that’s grain-free is needed on a ketogenic diet. Bread is probably one of the things I have missed the most since starting my keto journey. Just like my keto bagels recipe, these keto burger buns saved me plenty of times.

They are my favorite buns, and not only do they taste so close to the real buns but store incredibly. I always make sure to stock up on them and bake 2-3 batches, then freeze individually for further use.

The Secret Ingredient for Perfect Keto Buns

Psyllium husk powder is my secret ingredient for making the perfect keto buns that are low in carbs and perfect for sandwiches and burgers. Its unique properties make it an ideal substitute for regular wheat flour.

Psyllium husk powder is used as a binder in keto bread recipes and adds structure to the dough. It also helps to absorb moisture and prevent the buns from becoming too dry or crumbly.

By using psyllium husk powder in your keto bun recipe, you’ll achieve fluffy and delicious low carb buns that are both low in carbs and high in fiber.

What is Psyllium Husk?

Psyllium husk is a type of soluble fiber that comes from the seeds of the Plantago ovata plant. Psyllium husk is rich in soluble fiber, which can help to absorb water in the digestive system, making it useful in regulating bowel movements and promoting regularity. It can can be found in various forms, including whole husks, husk powder, and capsules.

Keto Buns Ingredients

Ingredients in these keto almond flour buns are actually super basic and easy to find. I suggest following the recipe as directed and don’t try to replace any of the ingredients as a result might not be the same.

  • Almond flour-This is one of my favorite flours when it comes to keto baking, and I suggest using super fine blanched almond flour. Almond meal is not the best choice, but it works too.
  • Psyllium husk powder –acts as a binder and helps all the ingredients stick together. Some psyllium husk powders may turn your buns purple, but you don’t have to worry – the keto buns taste perfect despite their color.
  • Hot water-Used to activate the psyllium powder gelling effect.
  • Apple cider vinegar- adds a slightly acidic taste or works as a leavening agent. Replace with cream of tartar or baking soda.
  • Egg whites-using only the whites significantly reduce that eggy taste in most gluten-free bread and help them to raise beautifully.
  • Sesame seeds-top the buns with your favorite seeds.

How to Make Keto Buns

This keto hamburger bun recipe is super simple to make by just following a few easy steps. Here’s what you need to do:

  • To make these keto buns, combine all the dry ingredients in a large bowl. Use a spatula to break any clumps. You can sift the flours to get rid of the bigger chunks of almond flour and reduce the gritty taste.
  • I am using a hand mixer to whisk together the egg whites, apple cider vinegar, and a pinch of salt until soft peaks start to form. It’s essential to beat the eggs first for fluffy buns.
  • Add the hot water and the beaten eggs to the dry ingredients and combine well. Try not to over knead the dough.
  • Oil your hands and form 6 rolls. Place them on a greased baking sheet. Brush each bun with egg yolk and sprinkle the tops with sesame seeds.
  • Place the buns in the preheated oven and bake for 40-50 minutes, depending on the size of your rolls. You know they are baked when they form a hard crust and are beautifully browned.

Tips and Variations

  • Allow the dough to rest for 5-10 minutes after mixing to allow the psyllium husk powder to absorb moisture and make it easier to form.
  • Try not to overmix the dough. Overmixing can make the buns tough, so mix it only until it’s well combined.
  • This dough is super versatile and can be used in so many ways. For example, shape it in different ways to make hot dog buns or hamburger buns.
  • Make sure to use enough psyllium husk powder as specified in the recipe and not whole husks to avoid your buns from falling apart.
  • Oil your hands to prevent the dough from sticking to your hands.

Variations

  • Garlic and herb: Add minced garlic and dried herbs like oregano, thyme, and rosemary to the dough for a savory flavor.
  • Cheesy: Mix shredded cheddar, parmesan, or other hard cheese into the dough for a cheesy keto bun.
  • Everything bagel seasoning: Mix in everything bagel seasoning, which usually includes sesame seeds, poppy seeds, dried garlic, dried onion, and salt, for a savory and slightly tangy flavor.

Why Are My Keto Buns Purple?

If your buns have turned purple, it’s happened because of the brand of psyllium husk used. You can try using the same brand as the one used by me to make this recipe. Although they don’t look very appetizing, it’s okay to eat the purple buns.

Remember to drink plenty of water when including psyllium husk in your meals to prevent constipation.

How to Store Keto Buns

This recipe makes 6 keto buns, so you’ll have bread ready for the whole week. There are 2 options:

  • Refrigerator: Store the buns in an airtight container, in the refrigerator, and toast in the toaster when needed. You can also heat them in the microwave if you don’t have a problem using one.
  • Freezer: Cut the buns in half and store them in the freezer for up to 6 months.

Description

These soft buns are perfect for hamburgers, sandwiches, and also low carb and keto-friendly. This recipe doesn’t involve lots of kneading the dough, and it’s ready in about 20 minutes!

Ingredients

  • 1 1/4 cups almond flour super fine
  • 5 tbsp psyllium husks powder
  • 1 cup boiling water + 1/4 cup (optional)
  • 2 tsp tsp apple cider vinegar
  • 3 egg whites room temperature
  • 2 tsp baking powder
  • 1 tbsp sesame seeds
  • ½ tsp salt

Instructions

  • Preheat the oven to 350°F/175°C.

  • To make these buns, combine all the dry ingredients in a large bowl. Use a spatula to break any clumps. Bring water to a boil.

Made these tonight, they were delicious. Waiting for them to cool before cutting open is a good idea. The one I cut warm deflated. The others had a nice middle. Definitely a staple. Thank you for the recipe!

My buns turned purple! I followed the receipe to a T but they came out purple! But they do taste delicious

This happens with some brands of psyllium husk.

I found that if the psyllium husk is ground to a powder it will react with the baking powder and create purple buns. Taste great, odd in appearance, would make great Easter buns!!
The other thing I do is bake them until, when tapped on the bottom of the bun, you get a thud sound. Usually baking a little longer helps dry the entire a bit more. Cool before cutting. Use a light touch.

I use the NOW brand of psyllium husk and turn it into a powder by using my blender.

I love this recipe so much! I even pat the dough flat onto a baking stone and precook it for an amazing pizza crust. I’ve made it with many brands of psyllium husk and the only one I’ve had that doesn’t turn purple is the NowFoods brand. Thanks for giving me pizza, toast and sandwiches again!

I was amazed at how bread – like these buns are. My husband loves them. He missed eating bread and this really has satisfied that graving. This recipe is a main staple in our house now. I have used different flours instead of the almond flour (which is super expensive here in Norway) and they all have turned out just as good. My favorite now is sesame flour with some finely ground flax seeds. I have even mixed in spices and some Stevia powder for a sweet bun version.
