What potatoes are best?

You can use russet potatoes or Yukon gold potatoes.

Can I skip out on sour cream?

You can omit the sour cream; however, it adds a delicious light acidity to such a rich soup. I’d recommend adding a light squeeze of lemon in its place.

Why is my soup not thickening?

You should allow your soup to reduce longer on low to get a thicker consistency and creamy texture.

Do I need to cook my potatoes before adding them to the soup?

The potatoes are cooked in the crockpot along with the rest of the ingredients to absorb the delicious broth.
