How I make brownie nice cream from scratch?

I start by pre chilling the blender bowl and a loaf pan in the freezer. Trying to keep everything cold will avoid ice crystals to form. And that is what we want; creamy not icy nice cream!

date paste

In the meantime I make the date paste if I don’t have any left in the fridge. Date paste is easy to make and requires just some dates, lukewarm water, a pinch of salt and a blender. Usually I make a big batch and divide it into smaller batches. It is freezable so you can even store some in the freezer for future use.

blend all ingredients

I add all the ingredients (except for the walnuts) to the pre chilled blender bowl and pulse it into a smooth consistency:

transfer to a loaf pan

I take the loaf pan out of the freezer, line it with parchment paper and scoop the mixture from the blender bowl into the loaf pan. If you are planning on using walnuts, add them to the blender bowl, stir with a spoon and then scoop everything out into the loaf pan.

After covering the nice cream with plastic foil (right on top of it), I cover the whole loaf pan with aluminum foil (all to avoid ice crystals). Immediately after I transfer the loaf pan back in the freezer.

I freezer the ice cream for at least 3 hours. When it is time to serve it, don’t forget to take your brownie nice cream out of the freezer 10-15 minutes before so it can soften up a little bit. This will make it easier to scoop.

Brownie nice cream; no churn healthy ice cream made with frozen bananas, dates, avocado, nut butter and cacao. Add some walnuts and espresso to make this the ultimate brownie ice cream!

Equipment

  • 8×4 inch loaf pan

Ingredients

  • 1-2 tbsp date paste (see recipe below)
  • ¼ cup almond butter (or other type of nut butter of preference)
  • ¼ cup cacao powder
  • ½ cup almond milk (or sub half of it for espresso to make espresso brownie ice cream!)
  • 2 medium bananas (frozen)
  • ½ small-medium ripe avocado
  • ¼ cup chopped walnuts (optional)

Instructions

  • Pre chill the loaf pan and the blender bowl.

  • Make date paste if you didn't already or if you don't have any left.

  • Add all ingredients except for the walnuts to the pre chilled blender bowl and blend until smooth and creamy.

  • Take the loaf pan out of the freezer, line it with parchment paper and pour the brownie nice cream into the loaf pan.

    Cover the nice cream with plastic foil (straight on the ice cream) and after that cover the loaf pan with aluminum foil.

    Place the covered loaf pan in the freezer for at least 3 hours to firm up.

  • Take the nice cream out of the freezer 15 minutes before serving so it can soften up a bit.

Date paste

Dates, a bit of water and a pinch of salt blended together into a paste used as a natural sweetener.

  • High speed blender

Ingredients

Date paste:

  • 20 large pitted dates
  • 2-4 tbsp warm water (start with just 1 tbsp. If too thick to blend add more water)
  • pinch fine grain sea salt

Instructions

  • Add dates and salt to the highspeed blender and blend into small pieces.

  • Now add just a bit of warm water to blend it into a thick paste, scraping down the sides periodically. Add more water if too thick, but not too much. You don't want it to be too liquidy.

Notes

Keep in mind that you will only need a small amount of date paste for the brownie nice cream. You can make less date paste by cutting the amounts in half or refrigerate/freeze in small batches for future use.
